Dessert on a BBQ – Peaches & Apricots

We all love our Barbecues – Hamburgers, Sausages, Chicken Wings & Fish. But have you tried Peaches & Apricots on the BBQ! Yum!

 

BBQ Peaches & Apricots
Ingredients
  • 1 Peach
  • 1 Apricot
  • 2 tsp Melted Butter
  • 1/2 tsp Cinnamon
Topping
  • 50 gms Light Ricotta Cheese
  • 20 mls Unsweetened Almond Milk
  • 1 tsp Honey
  • 25 gms Almond Flakes
  • 20 mls Sugar Free Maple Syrup
Instructions
Cooking The Fruit
  1. Cut one fresh peach & one fresh apricot (or any fruit that is in season)

    Brush fruit with melted butter, sprinkle with Cinnamon and BBQ until just soft.

Creating the Topping
  1. Whisk together light ricotta cheese, unsweetened vanilla almond milk & honey to a creamy consistency.
  2. Top with toasted flakes almonds & drizzle with sugar free maple syrup.

This is the best Tuna Patties you can make

Remember growing up and having Tuna Patties by Mum or Nanny/Nanna? Good ‘Ol fashioned Tuna Patties. Cook up a storm on a Greenplate Hotplate and if there is some leftover – take them home for a snack later or lunch the next day!

Old Fashioned Tuna Patties
Servings: 8 Patties
Ingredients
  • 425 gm Tuna in Springwater Drained well
  • 240 gms Potatoes
  • 1 small onion finely diced
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tsp Dijon mustard
  • 1 tsp Tuscan seasoning
  • Salt/Pepper
  • Juice of 1/2 lemon
  • Zest of 1 whole lemon
  • 1 Tbls olive oil
Instructions
  1. Mix all ingredients together, form into 8 patties.
  2. Pop them on a plate and cover for travelling to your barbecue

  3. Brush 1 Tbls olive oil over hotplate

  4. Place patties on the hotplate and cook on one side for 4 mins, then flip and cook a further 4-5 mins or until cooked through.

Prepared Yesterday – Eaten Today – Picnic in the Park

Lemon Herb Garlic (optional Chilli) Chicken

Preparing the day before or even the week before makes life so easy.

What it does for me is 2 things. 

Makes the chicken extra tasty marinading all night in the fridge and easy cooking for the next day, using it in salads or adding veggies and rice.

Ingredients
The marinade for my chicken
  • 500 gms Chicken Breast Tenderloins or Breast
  • Zest & Juice of 1 large lemon
  • 1/4 cup fresh chopped thyme
  • 1 tsp dried oregano
  • 3 cloves of garlic grated
  • 2 tsp garlic olive oil or plain olive oil
  • 1 tsp djon mustard
  • 1 tsp chilli flakes optional
  • Salt & Pepper
Instructions
  1. I place everything in a zip lock bag and zip it up before giving it a massage to combine all the flavours together.
  2. Pop it in the fridge OR even the freezer for cooking on another day.
Take this to the park with you and it's all ready to place on the hotplate. Super tender and juicy!
If you want rice with your Chicken - cook it at home and give it a quick heat up on the hotplate - it will be blended with all the juices and flavours from the chicken.

It’s fast, it’s delicious – it’s Brunch Made Easy

 

Brunch Made Easy
From start to finish .... 10 minutes! 

Quicker than waiting at a cafe and easier on the pocket

Ingredients
  • 60 gms Fresh Avocado
  • 60 gms Aldi Bergs bacon
  • 2 eggs + 2 egg whites + 2 Tbls water
  • 4 vine ripened cherry tomatoes
  • 2 cups raw spinach or a decent handful
  • 150 gms sliced mushrooms
  • 1 tsp olive oil
Instructions
  1. On the hotplate, I pop everything in the order I need to cook in.
  2. So bacon goes on first in one row to start cooking

  3. Second in is the cherry tomato to one side

  4. The mushrooms the other side

Once the above is all cooked - lets plate that up! The eggs & spinach take 30 seconds
  1. Mix the eggs with whites and water (the water makes your eggs fluffy and light) 

  2. Spread 1 tsp oil on the hot plate and pour the eggs on & keep moving them around as they cook

  3. On the opposite side pop in the spinach, that will wilt/cook as fast as the eggs cook

  4. When the above is cooked add them to your other ingredients on your plate and there is you Brunch - Fit for a King or Queen!

Exceedingly Good Chicken, Avocado & Cheese Quesadilla

Due to the popularity of our last amazingly tasty Cheese & Spinach Quesadilla, Feed Me Healthy has created yet another Healthy Quesadilla recipe for the hotplate!

 

Toasted Chicken, Cheese & Avocado Quesadilla
Ingredients
  • 2 x wholemeal tortilla
  • 60 gms Avocado
  • 150 gms Chicken Breast pre cooked on the hotplate
  • 50 gms Lite Cheese
  • 1 Tbls olive oil
Instructions
  1. Brush the olive oil on one side only of both tortillas.
  2. Place the tortilla oil side down on the hotplate and fill the tortilla with fillings

  3. Place other tortilla un-oiled side down - cook one side until crispy

  4. Flip over and cook the other side until crispy and cheese is melted.

Easy, Breezy, Beautiful Big Breakfast

There is no better way to start the day with a Beautiful Healthy Breakfast – Greenplates Hotplates for Healthy Hearts has the meal for you!

 

Big Healthy Breakfast Bowl
Ingredients
  • 100 gms short cut 97% fat free bacon
  • tomato mushroom spinach & rocket
  • 3 eggs + 3 Tbls water whisked together
  • 1 tsp olive oil
Hint: The water makes your eggs fluffy and light
Instructions
  1. Add bacon to hotplate first, and cook on one side before
  2. Spread 1 tsp of oil over the hotplate then add the whisked eggs, ensuring you constantly move the eggs until just cooked

  3. Cook tomato - halved, mushroom, spinach and rocket the same time as flipping the bacon over

  4. Everything should be ready at the same time.
