Lemon, Herb & Garlic Chicken

Do you sometimes like something fresh and tangy on the BBQ ? 

This Lemon, herb and garlic chicken is just the thing for your taste buds

Ingredients
  • 500 gms Chicken Breast
  • Zest & Juice of 1 large lemon
  • 1/4 cup fresh chopped thyme
  • 1 tsp dried oregano
  • 3 cloves of garlic grated
  • 2 tsp garlic olive oil or plain olive oil
  • 1 tsp djon mustard
  • Salt & Pepper
Instructions
  1. Marinaded 4 chicken breasts at home either the night before or just before leaving for the park

  2. Place them in a tupperware container or even a snaplock bag - this is a great way to travel with food.

  3. Place chicken on the BBQ with 1 tbsp garlic olive oil

Chickpea Greek Salad

Chickpea Greek Salad
Adding chickpeas gives the dish lots more fibre than regular Greek salad
Servings: 4
Ingredients
  • 1 x 400gm can chickpeas drained
  • 55 gms cubed South cape reduced fat feta
  • 1 small Red Onion diced
  • 1/2 punnet cherry Tomatoes sliced in half
  • 1 medium yellow Capsicum diced
  • 70 gms Always Fresh Black pitted olives sliced in half you can use kalamata however you need to check Smart Point values
  • 1 medium Lebanese cucumber sliced
  • 1 Tbls fresh oregano chopped
  • 1 Tbls fresh mint chopped
  • Salt & Pepper to taste
For the dressing
  • 1 Tsp olive oil
  • 1 Tsp dried oregano
  • 3 Tbls lemon juice more if you wish you can also use red wine vinegar
Instructions
  1. Mix together all the salad ingredients then pour over the dressing.
  2. Serve with Grilled Chicken

Pancakes – Who Doesn’t Love Them

Everyone loves pancakes but most people think they can only be done at home – NOT TRUE.

What a perfect way to have brunch, lunch or dinner in the park on a Greenplate® Barbecue. The New Greenplate® Barbecues are the ONLY public barbecue hotplate that can heat up to 400 degrees therefore ensuring your food is cooked to perfection. Everyone knows you need a HOT hotplate for pancakes.

Apple Pie Pancakes

Pancakes with sweet things - pancakes with bacon and eggs - pancakes with sausage - YUMMO!!

Servings: 2
Ingredients
  • 3 Tbls self raising flour
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 tsp Cinnamon
  • 1/2 cup mashed cooked apple I used tin apples
  • Pinch of salt
Instructions
  1. Whisk all the ingredients together to make the pancakes

  2. Use approx 2 Tbls batter for each pancake

  3. Flip when bubbles just start to appear on top. 

  4. Don’t overcook them, they only need a minute on each side - and they cook SUPER QUICK

  5. Makes 6

How to get them to the park you might ask - Easy.

 

Make your recipe at home and pop the whole lot into a Tupperware pouring jug or a shaker - most people have those as home. (or even make it in the container itself - it is a shaker after all) 

 

Serve with plain no fat yoghurt, fruit and maple syrup of choice.

 

For the Healthy alternative to ice cream or cream why not whip together some

  • No fat yoghurt (YoPro or Chobani - or Aldi's Hi-Protein Yoghurt)
  • Sugar Free Maple Syrup
  • Sugar Free Drinking Chocolate

Tastes like heaven ... oh we mean Chocolate Mousse 🙂

Portuguese Chicken Burger

There is nothing better than a burger on the barbie – Why not try a Portuguese Chicken Burger

Portuguese Chicken Burger
Ingredients
  • 1 Aldi Brioche Bun
  • 1 Chicken Breast
  • 1 tsp Masterfoods Portuguese Seasoning
  • 1 Tbls Plain 99% fat free yoghurt
  • 1/2 tsp Nandos hot sauce or mild
  • Lettuce
  • Tomato
  • 1 slice Bega 50% less fat cheese
Instructions
  1. Season Chicken with Portuguese seasoning and grill on the Greenplates BBQ hotplate. There’s no need for oil if your plate is hot. 

  2. Once cooked assemble burger & drizzle with sauce & enjoy.

BBQ Maple Glazed Pork with Salad

Who doesn’t love a yummy sticky BBQ Maple Glazed Pork Steak with fresh salad cooked on our Greenplate Barbecue. Take a look at our recipe and see if you can create this scrumptious meal. 

BBQ Maple Glazed Pork & Salad
Course: Main Course
Servings: 4
Ingredients
Pork Marinade
  • 4 Pork Steaks
  • 1.5 tbsp French, Dijon or wholegrain mustard
  • 1 tbsp Maple Syrup
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • 2 tbsp Orange Juice Optional
BBQ Salad
  • 1 Red Cabbage
  • 2 Whole Corn Cob Kernel Removed
  • 2 Carrot Grated
  • 4 Spring Onions Sliced
  • Dressing of Salt/Pepper
  • 4 tsp Olive Oil
  • 4 tsp White Wine Vinegar
Instructions
Marinade
  1. Whisk all ingredients together for the Pork Marinade and brush over pork. 

  2. This can be added prior to leaving for your family outing and placed into a snap lock bag. The longer the marinade is on the meat - the better.

  3. Place on BBQ hotplate and cook for 6 minutes one side, turn, 2 minutes other side.

    Rest for 2 mins

Salad
  1. Thinly slice red cabbage. 

  2. Remove kernels from corn cob - this can be roasted on the BBQ also - YUM!!

  3. Slice or dice Carrots, slice spring onions and dress with salt and pepper

  4. Mix Olive Oil and White Wine Vinegar together to make dressing
