- 100 gms short cut 97% fat free bacon
- tomato mushroom spinach & rocket
- 3 eggs + 3 Tbls water whisked together
- 1 tsp olive oil
- Add bacon to hotplate first, and cook on one side before
Spread 1 tsp of oil over the hotplate then add the whisked eggs, ensuring you constantly move the eggs until just cooked
Cook tomato - halved, mushroom, spinach and rocket the same time as flipping the bacon over
