Place the bread on the hotplate and toast till golden brown
Spread the mayo between 2 slices (top & bottom)
Pumpkin Purée (left over from dinner the night before - steamed pumpkin) spread in the middle slice of bread
Layer your BLT with lettuce, cooked bacon & tomato over the 2 layers
Season with salt & pepper
Want to fancy it up a bit and add more flavour??
Grate 1/2 fresh garlic clove into the mayo to make it an Aoli
