Hotplates for Healthy Hearts
Vietnamese Grilled (Sweet Chilli & Lemongrass) Chicken Salad
Servings: 2
Ingredients
  • 400 gms Mt Barker chili & lemongrass marinated chicken pack
  • 1 tsp olive oil
  • 1/2 Chinese cabbage finely shredded
  • Handful of bean shoots
  • 1/2 red capsicum
  • 50 gms dry vermicelli noodles cooked and drained at home
  • 1 punnet baby corn sliced
  • 2 spring onions sliced
  • 2 med carrots grated
  • 1 big bunch Vietnamese mint sliced
Dressing
  • 1/4 cup lime juice
  • 2 tbls fish sauce
  • 2 tbls sugar free maple syrup OR 2 tbls brown sugar
  • 4 tbls soy sauce
  • 1 small chili diced
Instructions
Chicken
  1. Add 1 tsp olive oil onto the hotplate and spread

    Place the chicken onto the Hotplate and cook until tender

Dressing
  1. Mix all ingredients together and pour over salad

  2. When chicken is cooked and dressing all organised - mix all ingredients and ENJOY!
